Perfect paring knife
Okay been reading reviews.. of course this knife will rust! That is an actual selling point! It is high carbon steel and will sharpen to razor easily and hold the edge. It has a wooden handle! You can damage it by soaking it in water! You use it clean it and put it up. This knife will last for decades! I know because everyone on both sides of my family has decade old old hickory. By the thing. Learn how to treat a knife. Enjoy using a sharp forever damn knife!

My Old Hickory paring knife has always been my favorite knife. It was my mother's favorite knife for many years, as well. She once told me that the more it was used the sharper it seemed to get. I have found that to be the case, too! (I'm good at cutting myself!) Recently the handle of my old knife broke (after nearly 40 years??). I was just sick about it! I put a rubber band around it to hold it together so I could still use it, but didn't now long that would last. I didn't want to be without my Old Hickory paring knife, so I ordered more to keep on hand for many years to come (and, to share, so I don't have to wait for others in my family to finish using "my" knife so I can use it!). I highly recommend "Old Hickory". The only thing that may turn some people off is that they can rust. But, with much use and taking good care to keep it dry, it will last for many years.

Love Old Hickory knives!
So, although I love this brand of knives you need to know the blade will darken and look dingy. That is the metal they are made from. You have to sharpen these knives as well. However, once you get a nice sharp edge it holds for a long time. I still use my grandmothers. I even buy this brand at auctions and flea markets. The wood handles will also lose their finish. Thats normal for Old Hickory knives.

Poor quality. Not high carbon. Terrible slicer.
I realize this knife was 9 bucks, so I didn't expect much; however, from the moment I held it, I could tell it was garbage. I don't know everything about knives and steel, but I do know a lot (I have been making knives for over a year). The edge on the knife is very obtuse. It is somewhat sharp but makes for a terrible slicer. Also, the blade doesn't even seem like it has been hardened. My plan for the knife was to modify it to be a good hiking/backpacking utility knife. I took a file to the edge and it dug right in (not hard). I also tried heat treating it and it did nothing to the hardness. If anything it got softer. Again, I don't know everything about steel, but this knife is advertised as 1095 and I am familiar with the heat treating specifics. I don't think it is as advertised. Long story short, I think it's a bad knife and bad steel. I can pay another 5 bucks and get a mora or something else.

Sharp blade but
The edge was sharp but somewhat rough from a corse sharping belt. The knifes does look good other than that.

You Can't Beat an Old Hickory!!
Cannot say enough good things about these GREAT knives!! I grew up with Old Hickory knives in the house and just can't do without at least one or two in the kitchen. They are of sturdy construction, hold their edge really well and frankly I have not found another product that comes close to the Old Hickory brand!! It can be sharpened if it starts to dull and if you take care of it, will last you just about forever!! I would not have had to buy anymore but as my kids left home and moved into places of their own I noticed my Old Hickory left with them! HA! If you need a GREAT paring knife I cannot recommend this brand highly enough! Service was really good and I got them packed well before I expected them. Great product and great service.

Cheap quality.
Handle was loose. Very dull and could not get a sharp edge. Verry disappointed with this. Was made in U.S.A. but looks and performs like China quality. Save your money
