Q: Would this fit the Lunix S5?

I'm balancing the Lumix G9 with the Leica 12mm lens on the Crane M3 with no issues. The S5 is very close in weight and size to the G9 (the S5 is 4mm less in width). Look at the specs of the Leica 12mm which is just under 12oz. If you can keep the lens size and weight relatively close, you should be fine. The key is to be able to clear the back of the camera from bumping the gimbal.

Q: How can you control the sony zv-1 with this?

It comes with a USB-C cable to connect to the camera, but I don't know if the ZV-1 has that connection.

Q: Does it works with dslr?

Yes it works with my sony a7m3, but you better check their compatible list to see if it works with your camera, or does it control your camera.
