My brand new wooden rolling pin says it should be "seasoned" with food grade oil, why? and would this be what I should buy?

Food grade oils just means to use oils that don't have any harmful chemicals. There are mineral oils that are not food grade, and mineral oils that are food grade. It is not recommended to use oils that don't go rancid, so food grade mineral oil is a good choice, but there are some bee wax products that are also food grade and don't go rancid

Can this be used to clean out ear wax? I've seen mineral oil recommended but then how is this different than baby oil?

Baby oil is simply mineral oil, usually with fragrance. You can use mineral oil, or at a pharmacy buy what's called "sweet oil", which is actually olive oil. I've used both and there's no difference as far as softening of ear wax. But sweet oil is a little thicker and coats the ear a little better. Oil needs to be used daily or several times a week to really be useful, otherwise buy an earwax removal kit which uses a solution to dissolve hardened ear wax build-up (you flush it out with tepid water and a soft bulb syringe). Then you may use oil for maintenance.
