I spent quite a few years working in commercial kitchens, and this knife is like the ones I used there, but better in every way. It's very sharp and I can tell it will be very durable in the long term. Buyers should be aware that the *blade* is 10", not the overall knife. It's a very long knife, and useful for trimming large vegetables or cuts of meat. Shortly after I got this knife, I mishandled it and cut my thumb down to the bone, so I can only give it one thumbs up, but definitely 5 stars! I would recommend purchasing some blade guards for this and Winco's other knives. I've replaced my entire knife set with Wincos and I couldn't be happier with how they perform. Check out Winco's other kitchen gear, too. They make great cutting boards and non-stick pans at very reasonable prices. No, I'm not a Winco salesman. I just own a lot of their products and all of them have been great to me.

Good knife. I deducted a star because I found it to be a bit thicker than I would have liked. Just my personal preference.
