Keep the heat low, really!
This is the second time I've purchased these pans. They are great pans and will remain nonstick for years if you take care of them. The most important part is keep the heat down lower than you are used to with other pans. I usually cook on 7 and higher but with these pans I cook at 3 or 4. Give the pan time to heat up before adding oil or food, about 3-5 minutes. If you do that, frying fish, beef, eggs, or anything else is easy and amazing. I got these because my wife won't allow Teflon or PFOA in the house but I want nonstick pans to fry in. The ceramic coating is more durable than Teflon but it can chip if hit hard. I put rubber shelf liner between the pans when storing them. Happy cooking!

Healthy and safe non-stick fry pan! No chemicals.
I've tried a couple of non-stick pans, not wanting to poison my family with complex chemicals, off-gassing, chipped pieces of "safe" technology or teflon or whatever. They each have their weakness, and usually die if you let them above 400 or if a food has a strong pigment (e.g. some sausages. The latest Greenpan cooking surface has no crazy chemicals and no carefully worded warnings or "approved safe levels" or other disclaimers that still mean there's a risk. I know have given them as gifts and response is always disbelief at a pan that cleans with water and a sponge no matter the disaster it has suffered! After a few months and hundreds of family breakfasts (see attached examples I send to the kids to bring them down to the kitchen in the morning, plus one example of baking a frozen pizza, plus my own ingredients as toppings, at 425 deg F in the oven with no harm to the pan) I can confidently say this is a safe non-stick pan that will serve you well. I give it a solid 5 stars. I will give it 4 stars as a token of balance on versatility. One, it can be chipped and the exterior surface will discolor and get stuff stuck to it. I cook over an open flame, and I don't mind. The Greenpan (pictured) with white surface has discolored a little with some sausages and burgers (all vegan) that were forgotten and left to turn to caramel at 400 degrees.) The pans are rated to 600 and have not lost their non-stick-i-ness. I would say the JUST Egg is one of the toughest foods to cook well and the Greenpan makes it look so easy to flip a plump, fluffy omelette and even (vegan) cheese doesn't stick to the pan (also a really tricky food to prepare in a pan, but once you have this non-stick pan, the idea of a 3 minute omelette before leaving for school and work is no longer a groaning drudgery and you can leave the kitchen with the small pan clean and no work to return to in the evening just to clean up before starting the next meal. How much more luxury can you buy for $50? : )

They will chip, even when using great care
The good: these pans are truly non-stick and work well. The bad: the 10" pan ceramic coating has started to chip off around the edges after about 1.5 months of use. I contacted Greenpan and they do not honor their warranty if you buy through a third party seller, which is not clear when buying on Amazon. I was going to buy more from this line but they don't stand behind their product and the long-term durability is in serious question here. And yes, I follow the care instructions and use pan protectors when storing them. So buyer be ware. EDIT: now the non-stick surface is starting to be stick. The Amazon seller also gave me the company name that they are an authorized dealer for Greenpan under and Greenpan won't respond to me about warranty.

This became our FAVORITE pan!
These non-stick pans are the best pans we’ve ever owned. They are heavy duty and the non-stick ceramic finish really means “non-stick” and so easy to clean. They are useful for so many different types of meals and cooking styles. Would highly recommend.

These are good pans with fair heat distribution but don't last long
These are good pans with fair heat distribution, especially if you allow them to warm up. We use them on our induction cooktop but only the small and medium sized pan are suitable. Decent, cool, handle grip and a very good non-stick surface. You cook with them on a fairly low temp and I have learned that using them to fry things accelerates the speed they lose their non-stick coating. So, low and slow is where you use this one. Regardless, they are good for maybe 4-6 months of daily use before they start to lose their non-stick. While they are not easy to scratch use only non-metal utensils.

Amazing pans... so long as you baby them
It's been nearly two months since purchasing the GreenPan Venice Pro set. So far, they have performed amazingly and there haven't been any issues. They have retained their non-stick properties, they are extremely easy to clean and cook as they should. That being said: these pans do require some extra care that most pans don't. 1) DO NOT USE OLIVE OIL! This is a must. These pans require only oils with a high-smoking point (any oil that can withstand a temperature close to 500 degrees). That is why GreenPan recommends avocado oil as the best oil for their pans. Ultimately, you have to research what the best cooking oil for you would be to use with these pans. The one advantage is that you don't need very much oil, due to the non-stick properties. 2) DO NOT USE HIGH HEAT! As much as these pans claim to withstand high heat, I'm skeptical, considering that the recommended setting to use these pans is a low-to-medium heat. You might need to spend some extra time heating the pan, but the pan does retain and distribute the heat evenly once it reaches its optimum heat level. Avoid letting the pan smoke. 3) CLEAN THE PAN AS SOON AS YOU'RE DONE USING IT! This is a bit of an annoying step, but you shouldn't leave food on this pan once you're done cooking. They recommend clearing the pan surface of any food as soon as you're done and wiping the surface clean. I may not adhere to this rule as strictly, but I am aware to at least not leave food on it, since the heated surface retains heat and can continue cooking the food, possible causing food to stick to the pan. This pan is ideal for any food you don't want to stick, like eggs, and to saute food or anything that needs light cooking. If you are looking to sear or fry foods, this may not be the pan for you. Nevertheless, this pan is a wise investment if you're concerned about toxins entering your food and you're seeking a Teflon alternative for your cookware.

These are wonderful pans.
I really like these pans. I bought these to replace the same size pans from a competitor. After 1 yr, the previous pans still had an unpleasant off gassing odor. I have an induction cooktop, and compatible pans are not easy to find. These pans are heavy, stainless steel, the titanium ceramic coating is easy to cook with, very nonstick. The pans have higher sides than usual frypans, which is very nice and useful if cooking large batches. However, the nonstick qualities depend on the user following the enclosed use directions. Please do not complain about the pans if you are unwilling to follow directions carefully.

Best pans after cast iron
I'm very picky about my kitchen stuff. I usually use my old trusted cast-iron pans where I can, but sometimes you just need to quickly make an omelet or caramelize some onion... These are perfect. They are not 100% non-stick, compared to Teflon. They are somewhat high-maintenance - no dishwasher (although they say they are dishwasher-safe, other people reported they are not), no metal tools, no scrubbing, or harsh chemicals. But they have incredible heat distribution, no Teflon and other poisonous components, and superb quality and ergonomics. I love this set and will buy again.
