The Shun Dual Core Kiritsuke is generously sized and meant to complete several cutting tasks around the kitchen. Kiritsuke knives are the only multipurpose traditional Japanese , and in Japan only the executive chef in the kitchen is allowed to use one. Why Dual Core? Winner of the Blade Show 2014 Kitchen of the Year, the Shun Dual Core series of knives creates for the first time, knives made of true layered and fold-forged Damascus from two premium quality stainless steels. Each features 71 alternating micro layers of VG10 and VG2 high-carbon, high-chromium stainless steels. The layers are welded together and fold-forged to give a finer grain to the steel and to create a beautiful blade pattern. This dual core construction features both steels going all the way to the edge of the light, thin blade. Each boasts a razor-sharp 16 degree angle, for the ultimate experience. Although thin and light, the blade is very strong, and is Shun's sharpest blade edge yet! During normal use, the two steels on the edge wear at different rates, creating micro serrations along the edge so the extremely sharp edge feels sharper, longer. The knives are made with a traditional Japanese octagon-shaped handle in ebony Pakkawood. Pakkawood is made of resin-impregnated hardwood, and is NSF Certified for use in commercial kitchens. There are many styles of Dual Core to choose from, and Shun will have what you need, whatever the job! Produced in Seki City, Japan, the capital of samurai manufacturing. Hand washing recommended.
