Is the grinding mechanism plastic or metal?

It IS ceramic. Ceramic mechanisms are usually white and look like plastic, but are not plastic. They will outlive a metal mechanism and you can use them for salt (the will not corrode'/rust. You also do not have to worry when using it over a pot of boiling soup, since the steam will also not harm the ceramic mechanism.

does have one have experience with its longevity? does it need to be replaced after awhile?

To be completely fair, yes, it will need to be replaced after awhile, though the two I have for salt and pepper are over a year old and still as good as new. That said, I will buy more when they break, because over the last 40+ years of cooking and purchasing many S&P sets, for literally hundreds of dollars over that time, the quality and performance of these cheap oxo grinders, is a much better bet than ones I've paid anywhere from 40-90+ dollars for, a few of which did not last even a year and one that broke within 2 weeks of use. So if I have to spend twelve bucks to replace one of these every few years or so, no big deal. I'll actually be saving money in the long run. Actually, as a note of interest, OXO STOPPED carrying these or discontinued them awhile back, and then found them selling on eBay used, for three to four times the price and with that started carrying and offering them again at their original cost! Mega-KUDO's and hat's off to OXO for their fair and honest business practices to do such!!! It would have been very easy for them to have "upped" the price even a few dollar's if they had decided to do so. For that, and continued fair pricing policies, I prefer them to almost everyone else making similar items in this field. And NO... I'M NOT AFFILIATED OR BEING REWARDED IN ANY WAY.... for my testimony here, it's solely my personal preference and experience with most all other like brands that I have tried.

Question 3

Can it be used for spices, coriander, etc?

For small spices, like tellicherry peppercorns or coriander, you'll need to keep the grind fairly fine so they don't fall through. It works well on everything large and small, from chiltepin to coriander. I have 6 of these above my stove with various colored peppercorns, seeds, and Szechuan and pepperbush berries.

I have this as far to fine as it goes, and I still get larger bits in with the small, is this inconsistency normal? Thanks.

No, I don't think it is normal.  I've had mine for quite a while and it still gives pretty consistent grinds.  In fact, I think it's the best pepper mill I've ever owned -- and I've owned a lot of them.
