The cookbook that changed how the world looks at dessertโnow in English. In Fruit: The Art of Pastry , Cรฉdric Grolet, Executive Pastry Chef at Parisโs legendary Le Meurice and Worldโs Best Pastry Chef (2018), invites readers into the revolutionary approach that made his desserts an international sensation. With a foreword by Alain Ducasse, one of the most influential chefs of our time, this lushly produced book stands as both a master class and a manifesto for modern pastry. Known for his breathtaking trompeโl'ลil creationsโdesserts that look exactly like real fruitโGrolet strips pastry down to its essence, then rebuilds it with precision, restraint, and respect for flavor. Lemons look freshly picked. Peaches appear dusted with fuzz. Inside, each dessert reveals layered textures and pure, concentrated taste. Organized into seven fruit familiesโranging from citrus and stone fruit to berries, exotic fruit, and nutsโ Fruit presents 130 meticulously developed recipes that balance artistic vision with rigorous technique. Grolet walks readers through his creative process, from initial sketch to finished dessert, revealing how design, structure, and flavor work together at the highest level. Lavishly photographed and technically exacting, Fruit: The Art of Pastry is ideal for professional pastry chefs, culinary students, and ambitious home bakers who want more than recipesโthey want to understand how great pastry is conceived. Endorsed by Alain Ducasse and admired worldwide, this is a landmark book in contemporary French pastry and an essential reference for anyone serious about dessert. Inside Fruit: The Art of Pastry , youโll find: 130 refined recipes featuring 45 fruits, organized by ingredient family Seven dedicated chapters, including citrus, stone fruit, berries, exotic fruit, wild fruit, seeded fruit, and nuts Detailed techniques for molding, glazing, sculpting, and achieving hyperโrealistic finishes Stepโbyโstep insight into Groletโs creative process, from drawing to final presentation Striking photography throughout, showcasing desserts as edible works of art A foreword by Alain Ducasse, underscoring the bookโs place in modern French culinary tradition Review: Gorgeous and inspiring book โ my friend was overjoyed to receive it as a gift! - I bought this book as a birthday gift for my friend, and she was absolutely thrilled! The photography is stunning, and the recipes are inspiring. Itโs a beautiful book for anyone who loves pastry or fruit-based desserts. Review: Fantastic book ONLY IF... - This book is wonderful, but if you actually want to use it and make everything, I highly recommend taking Cedric Grolet's class on pastryclass.com. It is expensive, but it is worth it if you really want to do these things. Taking that online class will fill in all of the holes that this book has. If you just want a coffee table book, it's beautiful, but if you want to make the desserts, taking his class might be the only way for you to successfully do that.

The book is pure art!
I really loved this book! After reading the reviews I wasn't sure whether i should buy it, but I did anyways, and I don't regret that I did! Everything is described nicely, pictures are beautiful, of course to cook everything the way it should be, you may need a couple of days to prepare the ingredients and equipment, but I'm sure it'll be worth it! I am very happy that he describes how to do the glazes (and has recipes for them), though I am not sure I completely understand, but I'll be working on it :) As soon as I cook smth, i will share my result here. I recommend this book very much, though not every recipe could be easily done at home..

A masterpiece of a Pastry book!
Where to start with this incredible book featuring the worlds best pastry chef! It's amazing what Cedric shares in this book. The recipes, while extremely advanced, gives fans of his work the opportunity to create these masterpieces of pastry in their very own home. Mind you, I won't be going out right away to buy a spray gun, but later on, who knows. Through this book, through his words and recipes, Cedric has inspired me to push beyond what I was capable of at home. I look forward to creating and customizing some of his creations. Fruit: The Art of Pastry c'est tres bien! Cedric Grolet, please make a sequel to this book!

Beautiful book
The desserts are very creative and photos are amazing. On some pages, the font color is a bit faded so it is a bit difficult to read. This is not a step by step guide, it assumes that the reader knows a few techniques (which can be easily searched on the internet). I tried making the pear cake, which seemed the simplest of them all. It did not turn out as beautiful, but it was quite delicious.

Experienced cookbook
Wonderful book amazing what he can do with food. I found that a lot of the recipes however are very similar to one another once you understand how he makes one fruit dessert the rest of them simply are a matter of quantities that one could easily figure out on their own. Still glad I bought it. Do not expect this book to walk you through every step is some beginner books to this is definitely for the experienced cook

Would recommend! ๐
Been reading this book for a while so I will leave a quick review. Would say Iโm a intermediate level pastry chef( worked in a patisserie for 3 years and self studying now) Ok what you need to know about this book! Firstly this isnโt really beginner friendly compared to the amount of books out there, I know you have seen the instagram reels and want to follow all his recipes ๐ which is great but this book is solely focused on how to work with fruits in patisserie also using techniques to make them look like fruits ๐ The bonus is the amount of amazing flavours you can make with recipes in this book! Which is another reason it is a great book to have but itโs actually little limited in its areas as it expects you to have a good understanding of patisserie to begin with to be able to make these recipes. In the end Beginner friendly 3/5 Knowledge 4/5 Flavours 5/5 Creative ideas 5/5 Good book to buy to increase your knowledge regarding using fruits with pastry( basically what the book says ) ๐ Ps. Packaging that the book came in was actually good
