can this be used with EZ track with a grey bed ??

This device can be used with any HO scale track, nichel silver or brass. It sits on top of the rails and roadbed type does not affect its accuracy.

What does this do? When I replace couplers I just put one where the other one was.

The gauge is used to align the height of the coupler. You are working with minute tolerances and your coupler kit should have come with shims. You could get lucky with a simple replacement and your train would run just fine. On the other hand, if the couplers are not aligned, you will have separation issues on any inconsistencies in your track or on the turns.

will this work for #5 couplers?

Yes, all Kadee couplers will work with either gauge. The non metal (insulated) gauge is made for DCC layouts but is good for any layout.
