## Description

Malolactic cultures are bacteria that convert harsher malic acid to lactic acid. They are often used in red wines to mellow them and sometimes in Chardonnay and Sauvignon Blanc to provide buttery notes. This culture is added 2-3 days into the initial ferment while the alcohol levels are lower. This was the original Malo-lactic strain that most winemakers used. One packet will inoculate up to 66 gallons!

**Q: Does this come shipped with a cool pack?**
A: No it does not. This is a dried product that comes in special packaging and is ready to use.  I've been using this product for a few years with very good results.

**Q: I only need enough for 5 gallons.  Can I measure out the appropriate amount and save the rest?  How long does it keep?**
A: I did similar, measured for 10 gallons, sealed the remainder in a ziplock and am storing in the freezer till next fall for another batch.  It may last one year, but i am just assuming mlf bacteria behaves similarly to yeast.  I wouldnt store for more than a year.

**Q: What is the typical amount of time does MLF go through?**
A: It depends upon the temperature but I usually allow about six months while the wine itself settles down (clarifies) further.

This brand of Malolactic bacteria is fine and used before. It is expensive and should be kept cool during shipping. This vendor shipped three packets of malo wrapped in a single layer of tissue paper and placed in a simple envelope. Handed off to USPS where it was delivered to my metal mail box to bake in the afternoon sun. I watched for delivery at my door. Received in 2 days so it got here quick. Vendor used poor packing and shipping method.
