Awesome!
I have it for years now, used and abused, still sharpens easily, keeps the edge, cuts like a scalpel. This company rarely disappointed me!

making dimples useless all together
Hubby got this for me for my birthday. I had previously purchased a Henckels knife (made for Target) that ended up only having dimples on one side- and of course, the smooth edge, the one hidden by the packaging, ended up being the side where the cut pieces end up when using the knife right-handed, making dimples useless all together! -at least as far as I'm concerned. He then purchased me a beautiful bright green Tomodachi, which has been fine for veggies, but can't be used for frozen items, and I find it much easier to prep meats for stir fry when they still have ice crystals, in order to have better control. It also did not keep as sharp an edge as I would like- kind of nicked here and there over time. I think I have finally convinced Hubby Dearest that investing in a quality knife the first time is actually more cost effective in the long run- especially since I am still happily using a couple of the Wusthof and Henckles Zwillingswerk knives my mother purchased in Germany when my dad was stationed there in the late '60s. (I had to arm wrestle my older brother over who got which ones... I let him have the pizza dough roller he used in his teens, so I could get the chef's knife! heh, heh, heh!) Back to this knife- It is proving to be wonderful! I have only come across a couple of huge sweet potatoes that the blade was not long enough to get through lenghwise in one pass. The blade is extremely sharp! I've nicked my left thumbnail a time or two, but have thankfully avoided any slicing of fingertips thus far- (yes, I know, I should concentrate on my knife skills a bit more! Nothing like having the cat dash out of the kitchen whenever he hears me pull a blade out of the block to convince me of that... Oh come on, I've only dropped the paring knife a couple of times- give me a break!) I wish this had been the first Santoku knife I ever purchased. (Does Goodwill accept donations of large knives? I have at least one I need to ditch!)

Fantastically sharp and really well balanced
Excellent alternative to a classic kitchen knife. Fantastic for prepping and dicing vegetables. The bevel is narrower than a traditional knife which means it can also produce really fine slices. Nicely balanced so also easy to use for delicate work as well as big chopping jobs. Great knife.
