Start the heat on high for a minute then turn it down. Put your hand over the pan if you feel heat then put your eggs in. It will not disappoint. I like my eggs cooked in a little butter so it's fine by me. I love my set so far its been great to cook with and the clean up is so easy. I want one more frying pan and waiting for the price to reduce a bit. Bottom line if you take care of these pans they will last a long time. Don't use anything but rubber or silicone utensils in the pans to keep from scratching. I cooked hamburger in the large pan and then made burrito mixture and simmered it . Totally perfect. **Q: 6 piece set says fry pans are 8" and10". i didn't think that blue diamond made an 8 inch fry pan. that's what i want. is it really an 8 inch?** A: I just used a measuring tape, and my smallest Blue Diamond fry pan measures 7-1/2 inches. **Q: Can these pans be used with olive oil? As long as you're not on really high heat, should be okay, but one review said instructions with pan say no.** A: I only use Olive oil to cook with. I've been careful not to over heat me pan . The highest heat I'm using is a little past medium. These pans are wonderful to cook in, they heat more evenly all the way to the edges. I did used an olive oil cooking spray in the can twice and it seemed to him it up a bit. It did clean off, but I won't use the can spray again. I'm hand washing as much as I can , but they going through the dish washer some with no problems with sticking and the finish seems to be intact. For, and with this manufactured process, one may stovetop bake. Caution is to maintain low flame temperature, else half-way through the baking time be prepared necessarily to 'flip' the product baking; otherwise, may a thick lacquered charcoal bottom result. Another baking method that completely avoids any charred bottom crust is and in a bain marie to steam the baked good. While steaming does take longer for the product to cook, this method is equally effective as convection oven baking. The only different, of course is the lack of a browned top crust. Therefore, and for the more appealing browned top crust, one may wish to experiment with 'flipping' the product. / One other aspect to this cookware set is the 2 utensils included.
