Halloumi cheese has an extremely high melting point so will singe when baked at very high temperatures, like meat, rather than melt like the vast majority of cheeses. This makes it a perfect vegetarian meat replacement. When broiled at high temperature, the halloumi somewhat resembles chicken. The halloumi both absorbs and enhances the flavor from the rest of a dish, while being far softer and more moist than regular meat. I regularly use it in a vegetarian family North African/Middle Eastern meal alongside okra, cherry tomatoes, rice, and various spices. The halloumi is the best part of the meal, combining all the best flavors of the rest of the dish. It’s fairly expensive, but in my opinion its quality fully justifies the price.To importantly note, the Halloumi is by far best incorporated into larger meals, fully cooked. I use it in place of paneer in Indian food, because I can never find paneer anywhere.
