Can I use this in place of your Salmon Classic which is almost impossible to find?

No, Old Bay Crab Cake Classics is not gluten free. This product contains wheat. Gluten and gluten products, when present, will always be declared on the product label by the common name of the gluten source such as “barley”, “wheat”, “rye”, “oats” or “triticale”. ~ Erica

Can tuna be used in place of crab?

I've never made tuna cakes, but I sometimes make salmon cakes as well as crab cakes. Sometimes from a scratch recipe, and at least once with this Old Bay mix (not sure which one I used the Old Bay for though). But extrapolating to tuna...as long as you are ok with the stronger tuna flavor as opposed to the more delicate crab flavor, I say go for it! It's worth the experiment, IMO. BTW, I like it that Old Bay doesn't overdo it with the crumbs.
