I have tried organic, I have tried fresh, I've literally been in olive mills all around Provence in early November when the farmers take the olives from their trees and arrive at the mills with truck loads of olives to be freshly pressed into oil for their own private use, not for sale, and tried day old, two day old freshly pressed oil.
