If making Kefir requires a fermentation process, and the vessel you make it in fits the silicone top the. Yes, it will work fine. I’ve started putting mine in the dishwasher( top rack only) to. Lean them before using them. Pretty good product.

Does this stay on securely enough that I could shake a drink with ice in a mason jar using this lid?

I just tried it! I filled the quart jar 1/2 full of ice, filled it to the neck with water, put the lid on and shook it over the sink briskly. It worked fine, but I would use caution still. Mine are new as well so I'm not sure about it over time. My kim chi loves them...
