Do these beans show the date of harvest? How do we know how old they are?

I don't recall seeing a harvest date on the beans, but I could have missed it. I've gotten unroasted beans from Bodhi many times- they have always been good!

It says these are green unroasted beans. But then it says it's medium roast. Which is it?

They are Green Un-Roasted, and they are indicating that these beans are best if done at a Medium Roast, you can roast darker or lighter, but the best flavor comes at a Medium Roast

Does the 5lb variety pack come in individually packed 1lb packages?

Yes. I received individual packages.
