Isnt Cayenne pepper supposed to be orange not red? Are you sure its Cayenne not cheap chilli?

Yes it can and should be a range of colour because its a natural grown product (without artificial or any colourants) and within that there is always a range of colours, however the flavour and heat are what always what you would expect.

What is the drying process of the herbs and spices ?

Machine dried. The drying takes about 12 hours, at the beginning temperature is high (90ºC) when paprika still fresh and it comes down to 40ºC at the end so the chillis do not burn.
