Soy sauce that is certified organic, naturally brewed, unpasteurized, and reduced in sodium. The description claims it’s aged in old wooden barrels, an artisan making technique with live probiotics. I’m no expert in soy sauce, and maybe such products are common in Japan, but I did not see another comparable product on Amazon. This was the most naturally tasting soy sauce I’ve tried so far, confirmed by the few natural ingredients, and no added vinegar or alcohol. With regards to sodium, this is a comparison per 1 Tbsp: • Kikkoman organic naturally brewed regular sodium: 990mg • Whole Foods 365 Organic Shoyu Reduced sodium: 650mg • This sauce: 720mg So this falls under the category of reduced sodium AFAIC.
