I found it very difficult to cook anything evenly, without burning the parts of the food, which were in direct contact with the base of the pan.When I used the lid, it just extracted all the moisture/juices from the meat.The end result being, effectively boiling/poaching the food.The juices would eventually evaporate, bringing the strong chance of localised burning, as mentioned above.PS.
