Are these the original little pearls some in same name on pkg are more like flakes? Really like the pearls.

When do these expire?

On the package it stated that from mfg date on each package till "best by" date is about 9 months. My particular order was not manufactured over 2 months ahead of when I received it.

If I only want to make 1 cup of potatoes, how much each of water and potatoes do you use?

It's half a cup of potatoes to a cup of water.

Front of bag says 42 servings, back of bag says 34. Which is closer to correct. That's a 25% difference?

You use 2 cups of of potatoes to 4 cups of water. Makes smooth mashed potatoes. A 28 oz bag will give you twice that amount of the finished product if you are measuring as instructions direct you. Using12-15 years, never have they disappointed. Hope that my answer is what you needed
