The arancini you make with this model are a little larger than the largest hen egg you can encounter.To give you a sense of how much rice to prepare, one pound of uncooked rice will yield enough rice for about 10-12 arancini, depending on how much stuffing you insert. After two or three, you get the knack and it's fast and easy to make a batch.Personally I don't deep-fry them. I bread them, lay them on a cooking plate, spray them with olive oil and bake them for 45-60 minutes at 350°.Don't be afraid to overcook the rice a bit so that it will be pastier and therefore less likely to fall apart once formed and removed from the arancinotto.
