"Pipian", it may be said, is as traditional as Mexican flag's eagle on the cactus. It's a sauce with a long history in the culinary Mexican culture. when prepared, it's like a gravy that can be used over chicken or pork (or any other meat you love). My personal preferred method of use is to saute till well browned (chicken or pork) with chopped garlic and diced onions. While that's browning, In an other pot, have chicken broth come to a rolling boil, add the 'Pipian' while using a wire whip to mix till thickened . When the meat is browned, add the 'Pipian' sauce to the chicken, cover and simmer on low till the meat is to your liking. At this point, I love to add Dona Maria's cooked cactus slices. Serve with Spanish Rice with Succotash as the accompanying vegetable. Yummy in the tummy!
