Stilton always has a fairly short shelf life and once the wax seal has been broken, the clock is ticking. The rule of thumb that I use if there is no marking is to use the cheese within a month and to keep it in the fridge. Clearly, Stilton has mould growth built in but any evidence of furry or unusual mould growth would cause me to throw the cheese out immediately. This cheese is pretty expensive and frankly, you might be better walking into your local Waitrose and getting a wedge of Cropwell Bishop to suit your needs.
