I'm confused on what the difference between the non-focused flow SSO2 fans are and the focused flow ones, any help?

The NF-A14 is a Static Pressure Fan. Static pressure is the force the air can pushed out of the fan. High air flow is a measurement of cubic feet per minute of air the fan can move at its peak.Usually a High static pressure fan will have a High CFM also. The reasons to get a High static pressure fan is if you need to blow air through a radiator/CPU cooler or even Pull air through a screen filter. This are where you need the pressure.  Unlike, say a rear exhaust fan, where nothing obstructs the airflow.  This fan will be good for any placement you decide on in your case as it does move a ton of air no matter what.  Just make sure you have it plugged into something that controls the speed based on the heat and not just running at 100% speed all the time as it will be loud at 3K RPM and almost silent at 1K or below.Also the NF-F14 has more airflow than the NF-F12.

Can you use an ULNA on this Fans? At what RPMS they will run with it at full load?

These fans draw considerably more current than the non-commercial fans.  I don't know the current handling capacity of the ULNA you are considering but, if it is one from Noctua's other fans, I would worry about its reliability.  The fan is designed to be controlled by PWM and the minimum speed it can run at in that environment is about 1300 RPM (40-42% PWM).  Wide open the fan runs at 2900-3000 RPM.  These fans are designed for maximum air flow and, while they are pretty mechanically silent, the air flow will generate some noise - especially if you have a filter in front of the fan.

How loud is this thing / which model is quietist?

Doesn't serm load to me .  I've got 2 in my server but i also have less hearing & tolerate my sever.  I've never been told too loud, & you can throttle it if needed.  Happy about cooling of it.
