When the boom is fully extended does it want to start sagging or tip over?

It does not sag. The clutch mechanism has teeth that bite into a hard rubber washer, providing a very secure positioning. As with all tripod stands, align one of the legs in direction of boom to prevent tipping when fully extended.

Does this stand use the standard 5/8" threading for the mic clip or the smaller 3/8" like other Hercules stands?

The smaller 3/8" is fixed to the boom, but it comes with a little adapter that converts it to the standard 5/8". So both sizes can be used with this mic stand.

Could I use this stand for choir microphone?

Absolutely. It's just a heavier duty mic stand.
