The way to use it is, start it for the first half hour with the lid on, then take it off to brown at the end. You need to grease well with butter, its not non-stick. But if you do this its fine, and the loaf will just drop out easily at the end.Its very good for use with the no-knead methods, eg the NY Times method. This method tells you to get a cast iron casserole, heat it at max that the oven will do, then when fully hot, take it out and drop the dough into it and put it back with its cover. This is possible with care, but manipulating that hot and that heavy an object, and its lid, is not much fun, and sooner or later a nasty accident is likely. To be safe you need industrial strength oven gloves.One of these and you get the same basic effect totally risk free. Just let it do the final rise in the tin, slot in the cover with the cover pointing out from the oven, and after a half hour slide it off using an ordinary oven glove. In this case it is the loaf of wholemeal spelt bread I baked in this pullman tin yesterday which I am just about to sample. It baked beautifully and the lid keeps the moisture in so that I expect to enjoy a delicious lunch today.
