how the heck are you supposed to use the wire on top to close it?

You put wire right under stop above where it says Dublin donuts keep up folded like it was before you opened it

There are instructions on the package that are helpful. However, I prefer my coffee a bit stronger so I use 8-10 tablespoons for 8 cups of coffee.

How far in the future is the expiration date?

Got mine late July, expiration is in September…same year of course.
