Overall they are fairly small in length (with the notable exception of the 14" carving knife!), very well-finished steel, good heft and sturdy feeling. RAZOR sharp.This would be a good knife for slicing vegetables very thin - although a traditional Japanese vegetable knife is typically single bevel (meaning the back side is completely straight) enabling extremely thin slicing. This has a dual-bevel blade, so take note. Sometimes a pointed knife is helpful when dressing veggies (i.e., bell peppers) so this knife isn't going to be a do it all for me. First off it has a full tang, so the blade goes all the way through the handle, you will never have a wobbly blade, we have all dealt with that in cheap knives! This has a solid wood handle that is beautifully polished...the blade itself is also highly polished so the food is quickly released as you cut. The knife is quite sharp and has a good weight to it. It does a wonderful job of cutting through my heirloom tomatoes! It recommended a whetstone for sharpening so I picked one up, but it comes pretty sharp! It slices through tomatoes and produce very easily.
