And last, but not least, and by far the hardest to avhieve, is just the right amount of intramuscular FAT (aka marbling) to add some richness, extra tenderness, and premium beef flavor. In its oldest and most original forms, only the leanest and toughest cuts are normally used for jerky, because fatty cuts tends to go prematurely rancid, and are also best enjoyed with quick or minimal cooking.
