There is no substitute...
If you are even vaguely serious about cooking authentic Indian food- or at least as authentic as can be prepared in the West- you will quickly come to realize that there are certain ingredients for which there is simply no substitute. Asafoetida, kalonji, amchoor, ajwain, fenugreek, cardamom, tamarind, and tumeric- these are among the spices that are essential to Indian cuisine, and for which there is no proper substitute. And the Kashmiri chili, either whole or ground (as in MDH Kashniri Mirch), is another essential ingredient in the Indian spice kitchen. It has been suggested- and by no less an authority than Madhur Jaffrey- that Kashmiri chili powder can be replaced by a mixture of cayenne pepper and paprika. With all due respect, it cannot. Kashmiri chili powder is not particularly hot (I generally use 2-3 teaspoons per two servings), but it is wonderfully rich, and imparts a deep, satisfying flavor to dishes like Chicken Dopiaza or Kashmiri Rogan Josh that you will never achieve using cayenne and paprika. And of course, Kashmiri chili powder is intensely red, making your dishes not only delicious, but beautiful. This is the real deal, and for authentic red 'curries' of any sort, there is simply no substitute.
