First of all, the beans are evenly roasted and at the right level, and look and smell fresh. I generally make this coffee with a French press, and while it's not exactly bold, it's well defined with distinct flavors. The coffee is not particularly acidic, and for me has a somewhat minerally taste, along with faint notes of chocolate and a slight nuttiness.Now that I know I like it, I'll definitely order two pounds next time as it's a much better deal. I'd rather come home and make my own than drink pour overs or any chain coffee that is more than 5 minutes old. This is the best low acidity coffee I've had, even compared to all the ones "recommended" on searches. UPDATE 2020: The last MULTIPLE orders have been screwed up - wrong variety sent, bags broken, expired bags, order not sent AT ALL, taking weeks to get here. Even tried ordering directly from company and the box (and bag of coffee inside) was torn when it got here.
