What would happen if i stuck this to the outside roof of my van?

Hello, for the time being, I have not seen it used on the outside of the car, usually to stick in the interior of the roof, stick on the outside should also work, but this is neither beautiful nor durable it.

What's the R value on this stuff?

Not very much. Thus is more used for sounding/noise reduction. For insulation look to insulating material.
