What's the HRC rating and how were they tempered?** A: They've said in other comments that it's 420J2 steel hardened to about 53 Rockwell. 420J2 is about the lowest grade steel there is for making knives with a low carbon content but it's cheap, corrosion resistant and since 53 is about as hard as the steel will get it's not likely to break. It's the same stuff you would use for your forks and spoons. **Q: Are these knives dishwasher safe?** A: Hello Bobby - The Kanpeki knives are dishwasher safe, however, it is recommended to was the knives by hand. Washing any knife in the dishwasher will result in the blade becoming dull much more quickly.
