This 30ml microbial liquid coagulant is a double strength, non-animal, non-GMO, and gluten-free rennet derived from Mucor miehei. Designed for vegetarian cheese production, it requires only 2ml per gallon of milk and works with all fresh animal milks. Optimal coagulation occurs at 35°C (95°F), making it a reliable, long-lasting choice for artisanal and professional cheese makers alike.

## Description

This is a Double Strength microbial rennet that contains no animals products. Non-GMO and Gluten FREE. Double strength microbial rennet derived from Mucor miehei. This rennet is acceptable for the production of vegetarian cheeses....1-the rennet must be added to 20 ml of water first. Use fresh, cool water in a clean container. 2- Let the solution stand for 5 min. 3- Warm the milk gradually, on low heat to 90 Fahrenheit (THIS IS IMPORTANT) 4- Add the rennet solution to the warmed milk and stir for up to 1 min to ensure that it is well mixed. 5-Move away from heat and leave the milk to stand with no stirring or agitation until it has set. This should take approximately 45 min. (THIS IS IMPORTANT)

**Q: i have used this 6 times - the curds do form, but they do not hold together (they dissolve into the liguid) . The only thing i did not try is ?**
A: In general all rennet in US are very weak. I’ve tried a bunch. The solution I had for this is after the curds get formed you cook them for 30-45 min in the same temperature you apply the rennet. It works for me perfectly
