What makes this switch a "32V"? Why not 120V?

This float switch is capable of handling 12V, 24V, and 32V systems. Unfortunately, it is not compatible with 120V systems.

Can this switch run 2 pumps?

The switch has an 18A rating, but I wouldn't recommend using that high of a number for reliable operation. Smaller bilge pumps run at approximately 3A, but have an inrush current much higher (at least 3X, so 9A or so). In theory you could probably get by running 2 small pumps, but I wouldn't recommend it. I've used a lot of these over the last 30 years and these switches are the weak point of the bilge system, so I typically try to have 2 complete float/pump systems for redundancy (I'm assuming this is for a boat application).

Would i be able to turn off a pump when a water level is reached if switch the polarity?

I do not think so. The switch itself is sealed and switching the way the wires are connected will not change polarity because switches have no polarity. Usually switches in this price range will have only one set of contacts which are open with float down and closed when float is up.

Don't buy the reed switches, they don't last. In addition, the reed switches fail with the circuit CLOSED. That burnt out 3 of my bilge pumps before I realized why the pumps failed. I run my bilge pump/float switch directly connected to a 100 watt solar panel (no battery). When the cheap reed switches fail they run the pump continuously until it overheats and dies—because all the water has been evacuated long ago. Since I bought one of these more expensive steel roller ball switches I've had no bilge pump failures every month or two. My pumps run all day off and on and those cheap reed switches can't take it.

New out of the package, the marine repair shop installed this switch and found it left my pump in a ‘constant on’ state whether the float arm is up or down. The seller sent a replacement switch but a simple continuity test with a multimeter (look it up, seller!) showed it too had the same flaw. Both units were sent back to the seller with a plea for better testing at the factory.
