can i store my water sideway in the shelf without spilling?

No. These caps are not tight enough for sideway storing. They are good for transporting only. If bottle falls in the trunk i get leakage. Just a few drops but i only need these for transporting. This works for me just fine. But I would not store bottles sideway using these caps.

Do they fit sparkletts bottles?

I have normal 5 gallon bottles that fits them well

Does the middle break away once tipped into the dispenser?

No it does not. This cap is for storage not to put into the dispenser.

Will these fit Deer Park 5 gallon bottles !!!!

These will fit the blue bottled water bottles like the ones you find in stores. Get the measurements of your bottle and then go to a store and measure those. Of course you can return them if they don't fit. Don't take them out of the bag - just squeeze them on
