What kind of stainless steel is this made of? How hard is it?

Chinesium. It is not capable of extreme torque... You'll need a real wrench for that, but I have tighetened various bicycle fasteners with it... And good for nylock/blue loctit too.... Also had success holding bolt while I had a crescent on the nut... Etc... If you baby it, it'll work fine.

Dimensions are: 73.9mm x 23.6mm x 2.5mm at the tool's largest dimensions. The skinny pry bar at the end goes down to 12.6mm wide.

What gauge are the spoke wrenches?

I suggest contacting the manufacturer online at "swisstechtools.com". I checked the description on their website for the spoke wrench, but it didnt say.... i assume they are standard sizes. You can email them from their website.
