It has bolder, spicier, brighter, more pickle-y flavors than most store bough kimchi. You can also store it in your fridge without the aroma escaping permeating everything.FlavorWildbrine is a bit of a fusion recipe. The flavors are a bit like a blend of 1/3 sauerkraut (minus the caraway seeds) and 2/3rds extra spicy kimchi (minus the fish flavoring). It's not only spicer and more pickle-y (as above) but also has a nice subtle sourness from the garlic and fermentation. It does not have fish sauce flavoring, no fermented shrimp. This is a minus for authenticity, but a plus for long term storage.Kimchi at a good Korean restaurant can be sublime when they get everything right. However, at the average KBBQ the kimchi can be very hit or miss. Without enough time to ferment and soak in the flavors, kimchi can be fairly bland. It can also be too fishy or too salty.Tastes vary, and there's a wide range of kimchi. So be sure to try different styles and brands until you find one you love. Wildbrine is the one I love.UsesWildbrine kimchi is perfect for simple rice dishes at home, or to satisfy random kimchi cravings. We used to make kimchi at home, or at least add chili paste to store bought jars to spice them up. Once you open a jar of kimchi, the aroma will permeating everything in the fridge.
