Could these be used to catch stripped bass?

I’ve never used them anywhere but fresh water but have caught all species with them. If I were to try them in the ocean I would use the 6 in or larger. I usually fish them in 10 feet of water or less. The bait has a unique sinkinging motion that attracts the bite.Buy a pack and experiment. Use a similar color you use for Strippers.

what size hook should i use??

For Texas rig I use a Gamakatsu 3/0 EWG hook. For wacky there are several options but a size 1 gamakatsu octopus circle hook or equivalent from Owner or your favorite brand work very well.
