You might be able to use a very fine textile on both sides of a thin slice of ceramic clay and roll them through. Complicated to clean though and the ceramic clay is water based which might encourage rusting of the machine parts that are not Teflon.

How thick is the thickest setting on this machine on a piece of clay?

There are 9 settings for thickness, 9 being the thinnest, that makes 1 the thickest. I measured with business cards and 1 is 7 cards thick.

How thin does this go? Can it produce a layer less than 1mm thick (roughly the thickness of 3 or 4 playing cards)?

I bought it to use to condition polymer clay, and the thinnest level gets close to that, if not even thinner.

No, I think the widest setting is more like 1/8th". It might be 3/16th, but not 1/4 " For thicker slabs, you would want to use an acrylic roller.
