These look well marbled and are thick, maybe and inch and a half, they are not huge steaks, 8oz after all, but that's big enough for a nice meal of steak, salad, and baked potato....yum. Cook on one side until it caramelized about 4 or 5 minutes, then turned 1 time only, until the other side was the same about 4 minutes. If you are unsure, watch some YouTube videos about how to pan fry a steak the proper way. My steak was medium rare and slightly crisp on the outside. Flavor and tenderness were great. Yes, there is a small amount of gristle, but nothing like some of these reviews say. Most steaks have some, no big deal.
