What size do you recommend for apple pie, recipes suggest 3 MM, you offer 2,4,6 mm. Would your or customers suggest 2 or 4 mm ?

I use 3 mm when I need to (pizzas and pie crusts) but that's because I have a pair of very elderly wooden dough guides of that size. 4 mm is useful for things like puff pastry cheese sticks. But I have yet to find a need for 2 mm pastry. I'm sure someone else has though!

Do the strips clip together if you need a thicker pastry

The thickness of the silicone strip is 2 /4 /6mm. But if you put 4mm on 6mm, you can get 10mm.
