I used the paste in cookies instead of vanilla extract and could tell the difference the paste makes. (One teaspoon of vanilla paste equals one teaspoon vanilla extract.) The texture is a thick consistency, more like a syrup than a paste. Besides vanilla beans, the paste contains sugar, alcohol, caramel color, glycerin, and xanthan gum. After opening the bottle, the paste should not be refrigerated, but kept in a cool, dark place.
