The clock stops every time it is inactive for 10+ minutes. 1. Is that normal? 2. How to make Windows to reset it from the internet after sleep period?

I have none of these issues. However Google windows 10 and ntp and you should be able to solve it anyway

Wanting to place this in my existing computer case. do i have to use the power adapter supplied or is there a place i can plug in power from my psu?

I have looked into doing the same. Short answer no you can't. The LattePanda only gets its power from the USB C port or the 4 pin power connector. There is no adapter to draw power from a PC PSU. The LattePanda has an uncommon power requirement, it does not directly translate to a PSU. It is possible to make your own adapter, but that is beyond my knowledge of electronics. Do not try to make your own adapter without knowing what you are doing, there is risk of injury.

can I have it so I can output 6-channel speakers?

It can be used as a super efficient crypto-currency miner, but 6 channel speakers..I dunnno.
