Why only three batches? It is because the kit only includes enough supplies (like sanitizer) for three batches, or can you only use the equipment 3x?

You can use the equipment well more than three times if you take care of the equipment. I chose this kit because it could be expanded if my cider turned out good, which it did by the way. The three pack of supplies gets you started and you can buy more if you decide home brewing is for you.

It says to add 3 tablespoons of honey, but I just want to add regular sugar. Anyone knows how much that would be? Also is the blow-off tube neccessary

First on reading recommendations I only used 2 tbsp honey and it was perfect. I recommend you Google a priming sugar calculator ( many out there on homebrew sites) and it can tell you exactly how much to use. Or you can email Brooklyn Brew Shop. They are super helpful and responsive. In my experience the blow off tube has not been necessary. I never got super vigorous fermentation , but that being said I would recommend you do it because there is not much head space in a gallon jug . Better safe than sorry.
