I love that it's gluten-free. I didn't use eggs and couldn't find a can of pumpkin so I substituted it with sweet potatoes. Just in water, plain, no sugar. You could also boil sweet potatoes. They are very easy to skin afterward. It worked out great. Actually no taste of the sweet potatoes only pumpkin due to the fabulous pumpkin spices. The aroma is heavenly. Also, I did not grease my muffin tins and they came out perfectly with no sticking.The mix will be like cookie dough, rather thick. I prefer larger muffins so I got 12 from the mix. If you prefer a wetter consistency, you can also use vanilla yogurt or unsweetened applesauce. I baked a little longer than what's suggested in the recipe because I like a crunch on the top.Seriously. So, I got a couple of these mixes to try out. You do have to buy canned pumpkin; I used 8 oz pie filling which is the same thing but with the spices already added.The result? Happy husband who is going to eat the whole cake by himself, I swear . I already have the puppy eyed beg of "can you make it again?".I did a very thin icing on top with powdered sugar, a bit of milk and more pumpkin spice. Honestly I would do it with cream cheese as well. It can balance out the spices well.
