Good quality leaf gelatin.
This is high quality BRONZE grade leaf gelatin - it has a good consistency, is completely transparent and has a neutral flavour for jellies and other culinary uses. I find leaf gelatin much easier to work with than the powdered kind - just soak the sheets in cold water for a few minutes to soften them prior to use. Although there are stronger grades of gelatin the manufacturers compensate by making the sheets different weights, which means that the overall effect is normally the same. A 3.3g sheet of bronze gelatin is equivalent to a 2.5g sheet of silver, 2g sheet of Gold etc. So if a recipe calls for a higher grade of gelatin you can still use this with trivial calculation.
